24 Days of Spice | Day 20 - BBQ Seasoning

BBQ Seasoning called for Jackfruit tacos!

It was a decent enough blend. The recipes require spices as well as BBQ sauce. I had a Honey BBQ that I added. Not sure if I prefer the sweet or more vinegar flavoring, but it ended up spicy sweet, which is always good.

I softened some onion and jalapeño in a pan to start. After opening the can of jackfruit, I rinsed it and placed it in a food processor to give it that “shredded” look. I’ve had some recipes that say to just cook it whole and then shred with a fork, but this is unnecessarily challenging. The food processor works really well.

After adding the jackfruit to the pan with the onions and jalapeños, I added the BBQ seasoning and enough sauce to make it a nice consistency for tacos and to not stick to the pan.

I served the tacos with a jan of pinto beans (heated and mashed with a fork) and green Chile brown rice (add a can of green chiles to the rice cooker). I had some leftover homemade cheese I shredded.

Ideally this would have been good with a slaw, maybe some potatoes or some other side veg or toppings. I was out of energy and ingredients, so making do served the purpose and was delicious!
