24 Days of Spice | Day 2 - Smoked Sea Salt
I lucked out with a quick recipe search for using smoked sea salt. One of the first recipes was a delicious Focaccia with Smoked Sea Salt and Rosemary from Little Delish. I went with real, full-gluten bread flour, but subbed sorghum for spelt. The rosemary was foraged from enormous bushes around my community. The total recipe took 3-4 hours, but I still consider it quick and easy. I didn’t use the full amount of sea salt it called for, but chose to sprinkle some on my soup to meld the flavors.
The soup is my pride and joy and was just a beautiful, delicious reminder of how infusing creativity into the kitchen can really bring excitement back into meals without breaking the bank or a sweat. My soup is a can of rinsed cannellini beans, a can of chopped tomatoes, leftover green beans from Thanksgiving, and a handful of kale all mixed with garlic, salt, and basil and heated over the stove until bubbling.
Day 2 was a good mix of homemade and canned. Slow living with a dash of “take it easy on yourself.”
