24 Days of Spice | Day 11 - Green Curry

I love curry, but it’s sometimes hard to find different blends or vegan versions. If you choose to make it yourself, you need at least 10 ingredients and lots of time. That’s why I loved Day 11.

When I make curry these days, I don’t follow a recipe, I just cook what I have.

For this curry, I heated carrots, green beans, potatoes, and zucchini in some coconut oil. Once heated through I added the curry, mixed together, and heated a bit more. I don’t fry the veggies all the way cooked, I add a can of coconut milk and a can of water and boil the veggies until tender. Towards the end I added kale and cilantro.

To serve, I baked tofu and added some leftover jasmine rice. I added a splash of sriracha for a bit more heat, too.
