24 Days of Spice | Day 23 - Gingerbread Spice Blend

I was tempted to make gingerbread cookies with this spice blend, but I really didn’t have the time or energy.

I went with Gingerbread oatmeal instead.

I’ve mastered microwave oatmeal. As long as you pay attention, no goopy mess of overflow to clean up. Start with 1:2 Oatmeal:Water and a dash of salt. Heat in the microwave in 1:10 increments and stir in between. I normally only need two sets. It’s ok if it’s still a little watery, it will continue to thicken up and cook.

Once out of the microwave, I added the spice blend, brown sugar, molasses, and some pecans.

Once all stirred together it forms a beautiful gingerbread color, but looks a little less appetizing. I like the pre-mixed photo better.
